Accept Various Criticisms

First of all, Dogen Zenji says the Tenzo (head cook) must be a man of big mind to accept various criticisms and complaints with not a smile, because if you smile they will be more angry; you cannot even smile [laughs]. Just to accept what they say and to understand our human nature is the only way.
